Apple Crisps
Topping:
1 1/2 C whole wheat flour
1 1/2 Tsp cinnamon
1/2 Tsp nutmeg
3 TB Olive Oil
3 TB maple syrup
1/4 Tsp sea salt




  -  Preheat oven to 350 degrees
  -  To make the topping, mix all ingredients other than the flour, then add flour
  -  Stir, then rub between palms until mixture resembles a coarse meal
  -  Spread on a baking sheet
  -  Bake until mixture dries out somewhat, about 10 minutes
  -  To make the filling, heat the oil in a large skillet
  -  Sauté the apples briefly to coat
  -  Add the other ingredients to the pot
  -  Stir and cook uncovered over medium low heat
     stirring occasionally for about 10 minutes, or until apples soften
  -  Oil an 8-inch square baking dish (2 quart capacity) with corn oil
  -  Add the filling, spread the topping over the apples, bake for 20 minutes.
Filling:
1 TB Olive oil
6 C apples, halved, cored, and thinly sliced
1/4 C raisins
1/4 C lemon or apple juice
1/4 C maple syrup
1 TB vanilla
1/2 Tsp sea salt
corn oil for baking dish
